1 Delicious Red Sauce Pasta Recipe- Indian Style!

Hello All!

Today I will be sharing with you’ll the recipe for Red sauce Pasta. An Italian cuisine that has been custom made for Indian Taste (Jo Ghar mei hai ussi se banao- Made from what was available at home :P). As lockdown is in full effect here in India, we can get to try out new dishes.

Pasta is mostly served for dinner but I feel they don’t have specific timelines to have them- be it for breakfast, lunch or evening snacks (Maggi substitute). The only requirement is that it should be served hot!

Ideally, the entire process takes about 30 minutes to prepare. The red sauce which acts as the base is basically made from fresh tomatoes, garlic and herbs. For garnishing we can add cheese for the extra delight! So now the basics have been introduced, lets jump into the recipe.

Ingredients needed for making red sauce pasta (Serves 2-3)

1- Pasta (1 cup).

2- Tomatoes (2-3).

3- Capsicum (1).

4- Onion (1).

5- Refined Oil (4-5 tbsp).

6- Salt and Pepper (as per need).

7- Tomato Sauce (2 tbsp.).

8- Oregano (as per need)..

9- Chilli Powder/ Chilli Flakes (as per need)..

10- Schezwan sauce (optional).

11- Cheese for topping.

Step by step Procedure for making Red Sauce Pasta-

Pasta Prep:

  • Take a kadhai/ hollow vessel to add water and put in the pasta (any kind of pasta will do).
  • Add some salt and oil to kadhai so that the pasta does not stick when boiling.
  • Boil the pasta for about 8-10 minutes. Boil until they become soft (don’t overdo it).
  • Once done strain the excess water and keep it to cool.

Getting the Veggies and Red Sauce ready:

  • Meanwhile, your pasta is boiling, cut the onions, tomatoes and capsicum into small cubes
  • Take a pan, pour 3-4 tbsp of oil and let it heat, then add the onion and give it a good mix.
  • Add the diced tomatoes in and let them cook in low flame. (One can use a smasher or use mixer to make the paste of the tomatoes).
  • After 3-4 minutes add tomato sauce into the mix. If the gravy seems too dry add some water else add the diced capsicum into the mix.
  • Mix all the masalas now- Chilli powder, salt and pepper.
  • Now time to add the Pasta into the mix.
  • Mix them for about 2 minutes and turn off the gas.
  • Add the oregano and chilli flakes and schezwan sauce (optional- for spicy pasta lovers).
  • Grate the cheese in the end for topping and bit of pepper for garnish!

Voila, Your red sauce pasta is ready to be served!

Tips:

  • While boiling the pasta, turn off the gas when cooked about 80% as the rest the cooking will be taking in the pan with the mixture.
  • Completely cooking the pasta will mostly lead to a mushy pasta (to be avoided).
  • For more Indian flavour we can add garlic (3-4 finely chopped) along with the onions at the start.
  • We can add red and yellow bell peppers if you have to make it look more appealing and fresh cream for topping.
  • To make the non-veg version one can add the chicken pieces or prawns/shrimps along with some veggies or totally skip them.
