A delicious White Sauce Pasta recipe- One would Feast on!

Hello All!

Continuing with the lockdown and so trying out new dishes being the new norm, today I will be sharing with you’ll the recipe for White Sauce Pasta- An Italian cuisine that has been custom made for Indian taste. Pasta is mostly served for dinner but I feel they don’t have specific timelines to have them- be it for breakfast, lunch or evening snacks (Maggi substitute). The only requirement is that it should be served hot!

The entire process should take about 30 minutes to prepare. White sauce is very rich as it’s basically made from Milk, cheese and cream as compared to a Red sauce variant which is made from tomatoes. We can indulge in more veggies for a White sauce pasta mainly- Capsicum(green, red, yellow your choice), along with onion and carrots. Corn and Mushroom can be used additionally. For garnishing we can add cheese for the extra delight! So now the basics have been covered, lets jump into the recipe.

Ingredients needed for White Sauce Pasta (Serves 2-3)

1- Pasta (1 cup).

2- Capsicum (2).

3- Onion (1).

4- Carrots (2)

5- Garlic (4-5 cloves finely chopped)

6- Refined Oil (4-5 tbsp).

7- Salt and Pepper (as per need).

8- Butter (2 tbsp.).

9- Milk (1 cup).

10- All Purpose Flour (Maida). (1 tbsp.)

11- Oregano (as per need).

12- Chilli Flakes (as per need).

13- Cheese (as per need).

Step by step Procedure for making White Sauce Pasta-

Pasta Prep:

  • Take a kadhai/ hollow vessel to add water and put in the pasta (any kind of pasta will do).
  • Add some salt and oil to kadhai so that the pasta does not stick when boiling.
  • Boil the pasta for about 8-10 minutes. Boil until they become soft (don’t overdo it).

Getting the Veggies ready:

  • Meanwhile, your pasta is boiling, cut the onion, carrots, garlic and capsicum into small cubes.
  • Take a kadhai, pour 3-4 tbsp of oil and let it heat, then add the onion and give it a good mix.
  • Add the garlic, capsicum and carrot to the mix and stir for 2-3 minutes.
  • Add salt and pepper along with the herbs (Oregano and Chilli Flakes) and give the veggies a good toss.
  • Your Pasta should have boiled by now, strain the excess water and keep it to cool.

To Prepare White Sauce:

  • Take a Kadhai and add butter.
  • Once the butter melts add Milk and Maida to it.
  • Keep stirring until the milk turns to a sauce-like state.
  • Add more pepper to the mix.
  • Then add the veggies and pasta to the white sauce.
  • You can add additional cheese at this stage (if needed).
  • Place it on a platter and grate additional cheese, add pepper and herbs as a topping.
  • Voila, your White Sauce Pasta is ready to be served!

Tips:

  • While boiling the pasta, turn off the gas when cooked about 80% as the rest the cooking will be taking in the pan with the mixture.
  • Completely cooking the pasta will mostly lead to a mushy pasta (to be avoided).
  • We can add red and yellow bell peppers if you have to make it look more appealing and fresh cream for topping.
  • Adding Corn and Mushroom certainly increases the taste so try adding them.
  • To make the non-veg version one can add the chicken pieces or prawns/shrimps along with some veggies or totally skip them.
