Today I will be sharing with you all an easy, fried, crispy snack that is made with leftover idlis- Idli Fry. The best part: It needs just 3 ingredients to be made!
Idli (Idly) originated from the southern part of India and is generally eaten during breakfast as it’s considered a healthy and filling meal. Now that’s out of the way, what should be done when there are leftovers? It’s simple -Just fry them! Let’s get into the cooking…
Idli Fry Recipe
Ingredients required-
- Leftover idlis.
- Oil.
- Salt.
- Red Chilli powder (Optional).
Preparation Steps-
- Cut the idlis vertically (3 is ideal but not more than 4 cuts per idli.)
- Take a kadhai/ wok and pour oil (as needed for deep frying).
- Once heated drop in those cut idlis. (Don’t overcrowd.)
- Use medium-low flame on start, once they turn slightly brown turn up to high flame and remove them.
- Once all the idlis are fried, just sprinkle salt and chilly powder (optional) on top and mix well.
Voila! Your Idly fry is ready to be served.

Tips for preparing Idli Fry:
- Never use freshly cooked idlis as they will soak more oil and might just stick together.
- You can use idlis made for breakfast for evening snacks, just make sure to refrigerate them before use.
- Once you get the colour change in idli, on turning to a high flame remember to take them out within 10 seconds.. the change from low to a high flame makes the idlis more crunchy! but don’t overdo it or you might then end with burnt idlis 😛
- You can have these served with coconut chutney or sambhar. I personally like them as it is.
